Zesty Lime Shrimp Tacos With Mango Slaw

In honor of Cinco de Mayo I decided to make zesty lime shrimp tacos! These absolutely burst with flavor between the zesty marinade and the creamy avocado mayo drizzle.
You can use any kind of shrimp, of course peeled/deveined is most convenient. My go-to build is some sort slaw, in this case mango slaw. Then the shrimp, then a dash of the avocado mayo, and why not squeeze some more lime juice on it!
Heating up the tortillas makes them more pliable. Corn or flour tortillas are best, you choose based on your preference I think both are great.
It is so easy to overcook shrimp. Tough shrimp can ruin a dish no matter how flavorful it is. Be sure to cook on one side until you can see the pink creeping up the side (about 2 minutes), then it is time to flip and cook for another 2 minutes.
This is honestly a healthy dish when considering the fresh fruit and veggies, shrimp and avocado mayo so no #foodylegithealthtip this time!
Tortillas of your choosing

Peel/Devein your shrimp if need be. Mix together honey, lime juice, sriracha, salt & pepper, ground ginger, and avocado oil. Let marinate for a few hours in the fridge.
Begin cooking the shrimp on medium high heat, about 2 minutes per side until the shrimp is pink and no longer translucent
While the shrimp is cooking begin to make the mango slaw by chopping up your pre-made coleslaw mix as fine as you would like. Next dice a red onion, and then dice up a whole mango. Mix together after squeezing some fresh lime juice into it.
At this point you can grill your tortillas real quick until warm.
Prepare the tacos by throwing down some mango slaw, then place some shrimp, lay a couple of slices of avocado, and then drizzle some avocado lime mayo on. Garnish with fresh cilantro and serve.
