Bell Pepper Nachos

Nachos but with a twist! This recipe puts a healthy spin on a classic crowd pleaser. This is one of those recipes that is really hard to mess up so have some fun with it! As with regular nachos you can customize these almost endlessly. For this recipe I kept it simple and used turkey meat, cheese, avocados, and onion.
The reason why I use Greek Yogurt for the sriracha sauce is maintain continuity with the healthy version of this recipe. You can just as easily make a homemade mayo. (Recipe here)
Mixed Bell Peppers
Shredded Taco Cheese Mix
Plain Greek Yogurt
Salt & Pepper
1 onion (red or spanish)
Preheat oven to 400 on broil.
In a medium sauce pan cook the ground turkey on medium-high heat with a healthy pinch of garlic powder, onion powder, cayenne, paprika, salt & pepper.
Slice bell peppers into 1/3's or 1/4's depending on the size. (They must have some type of wedge shape to hold all the filling).
Slice or mash (personal preference) the avocados and dice up the cherry tomatoes and onion for garnish.
When the turkey is finished scoop it into the peppers. Sprinkle the cheese over the nachos.
Place under broiler for about 8 minutes, or until the cheese is completely melted and the peppers have a slight char.
Combine a large scoop of greek yogurt with a healthy squirt of sriracha and mix (you may add a splash of warm water to help thin drizzle it over the nachos.
Remove from broiler and add the onions, avocado, and sriracha sauce.
